Vibrant colorful food makes my heart happy. And this rainbow salad not only makes my heart happy, it makes my taste bud happy and it makes my tummy happy too. Should I call it my Happy Detox Salad! Well whatever name I gave it (rainbow or happy) this Detox salad with avocado dressing is so delicious, easy, few ingredients needed and off course healthy.
If you follow me along then you know I been sharing detox recipes for last couple of post. After detox smoothie and Detox soup recipe, a detox salad is obvious isn’t it 😉

To make any salad delicious and healthy, dressing is vital. Yes you heard right, not all salad dressing is healthy. Especially if you buy salad dressing from store, keep eye on its ingredients and calories.
I like to make my salad dressing at home. And why not, making salad dressing at home is easy & cheap. I am sure once you start making them at home, you will never go back to store-bought one.
Now back to this Avocado salad dressing. I keep it very simple with few ingredients and no oil. If you like you can add some olive oil, cilantro or parsley leaves to this dressing. For me easy recipes with few ingredients make me prepare that recipe more often and continuity is very important for healthy eating.
For this Detox salad I choose Purple/red cabbage, Carrot, Cucumber and Red Bell pepper. I avoid tomato intentionally because I like this salad more crunchy. You can use yellow or orange bell pepper instead of red one or you can have a mix of all colors.
