A Dill-licious cucumber salad is on the menu today. The other day when I saw some fresh Dill on my neighborhood market, I immediately grab couple of bunch and know what I am going to make first.

This Dill-licious cucumber salad is most easy to put together and most refreshing salad ever. Well at least to my taste. I like cucumber all around the year but on summer time, I like cucumber salad that can be made ahead and eat cold.

Dill-licious Cucumber Salad

This salad requires very few ingredients. First we need fresh cucumber. I use here some regular baby cucumbers; they are soft and have less seeds. You can use seedless cucumber too. I prefer to peel of my cucumbers. Then we need a big bunch of fresh dill leaves and red onion or shallots. We will marinade them with simple homemade vinaigrette.

  • 4 Cups Cucumber (thinly sliced)
  • 1/2 Cup Dill (finely chopped)
  • 1/2 Cup Red Onion
  • 1/4 Cup Lemon Juice (add less if its very tangy)
  • 1/4 Cup Apple cider Vinegar
  • 1/4 Cup Olive oil
  • Sea Salt to your taste


  1. Mix everything in a bowl. Cover with a plastic wraps and let it chill in the fridge for couple of hours before serving.

Recipe Notes

Usually I add salt just before serving so it won't watery too much.
