Minty Strawberry Salsa – Vegan recipe

When you find your strawberries not so sweet or little tangy what you would do!! I will definitely make this Minty Strawberry Salsa. This salsa is so easy to make, very few ingredients needed and very refreshing for any summer days. I will also share couple of my favorite way to eat this salsa. So let’s get started.

Minty Strawberry Salsa in process

As I say earlier, this salsa needs very few ingredients. From the name you already know that we need fresh mints and strawberries for sure. We also need Roma tomatoes or salad tomatoes. I usually do not use cherry tomatoes on my salsa because it gives more sweet taste. Then I use jalapeno, if you like spicier you can use Thai green chilies. I use red/purple onion here but white sweet onion also taste good in this. Then we need fresh cilantro, fresh lemon juice and salt according to our own taste. I don’t like black pepper in my salsa but if you like go ahead and add.

Minty Strawberry Salsa on Avocado Toast

Now that we made this quick and easy summer salsa, let’s make a toast. Yes, my most favorite way to eat this salsa is on the avocado toast. Just grab a well ripe avocado. With a fork mashed on a toast ( I use a spoon to flat it out but it not necessary) . Put salsa on it and pour little maple syrup. It taste sooooo good.

Cauliflower steak with Minty Strawberry Salsa

On this pic, I paired this salsa with a cauliflower steak. If you are looking for a light plant-based dinner idea then it could be one. To prepare this Cauliflower steak, I marinade this with Cajun flavor and olive oil. Then bake it for 6-8 minute each side at 400F, for burning top, broil 1-2 minutes on high. Now enjoy with your minty strawberry salsa.

Ingredients

  • 1 Cup Strawberry (chopped in small cube)
  • 1 Cup Tomato (chipped in small cube)
  • 1/4 Cup Onion (chopped in small cube)
  • 1/4 Cup Jalapenos (chopped in small cube
  • 1/2 Cup fresh cilantro & mint chopped together 
  • Fresh Lemon juice to your taste
  • Salt to your taste

Instructions

  1. Mix everything in a bowl except salt if you not serving right away. Add salt before serving so it not became too much watery.
