Here is an easy festive rice recipe to jazz up your holiday menu. Mixed Nuts & Dried fruits Rice Pilaf or pulao.  I know it’s a pretty long name but if you want a nick name you can call it NUTTY FRUITY RICE PILAF. Little Story Time…

Rice dish is a must in my house. We have some kind of rice dish everyday like plain white rice or plain pilaf or khichuri/khichdi. On special occasion, rice is a main side dish for sure. We even have some traditional Bengali dessert made with rice and we have tradition to serve/have those rice desserts on our festive menu. For example, A Bengali wedding menu without rice pudding (Payesh) or sweet saffron rice (Jorda) is incomplete no matter how many other desserts item the menu has. We have a big festival where we celebrate new crop mainly rice. On that occasion we made hundreds of different rice cakes (Pitha). You all can guess now how much we are connected with rice. (Lol)

This Mixed Nuts & Dried fruits Rice Pilaf is not a traditional Bengali dish but a fusion of mine. To give this rice an eastern touch I use Cashew and Pistachio nuts but you can use any other nuts of your choice. To keep this recipe simple and easy I use two types of nuts and two types of dried fruits. I recommend to use Basmati rice for this recipe.

Did I mention this is a kid friendly recipe! Because of nuts and fruits this rice tastes pretty sweet. Also I use minimal spices and oil in this Mixed Nuts & dried fruits Rice Pilaf recipe to make a healthier version. This recipe is not only great for holidays but good for kid’s lunch boxes too.

Ingredients

  • 1 Cup Basmati Rice
  • 1/2 Tsp Ginger paste
  • 1 clove minced Garlic

Mixed Nuts & Dried Fruits 1/2 Cup (together)

  • Raisin
  • Apricot
  • Cashew
  • Pistachio
  • 1 Bay Leaves
  • 2-3 Cardamom Pods
  • 2-3 Cloves
  • 1/4 Cup Sliced Onion
  • 1 medium Cinnamon Stick
  • 1/2 Cup Almond Milk or your choice of milk
  • 2-3 Tbsp Oil
  • 1.5 Cup Water
  • Salt to your taste

Instructions

  1. Wash rice and soaked it for 20 minute.

  2. Put saucepan or pot on medium heat on stove top. 

  3. When pot gets warm, add half of the oil and all nuts and dried fruits. Fry them for 2 minute.

  4. Take out nuts and fruits and put a side. Now add rest of the oil on pot. 

  5. Add Onion, Garlic and all the spices except Ginger paste.

  6. Fry them for 1-2 minute or until onion started translucent. 

  7. Now add Rice & ginger paste. Fry them for 2-3 minute.

  8. Add milk, water & salt. usually I warm them for 30 seconds in microwave before adding to rice.

  9. Cover it with a lid & let it cook for 6-7 minute. In this point add half of the roasted nut & fruits and put the lid back on.

  10. reduce the heat to medium low and cook for another 10 minute or until all the liquids absorbed. 

  11. Before serve, Garnish with rest of the roasted nuts & fruits.
