Mt. Olive has been always a staple in my home. Their product quality never disappoints me. Well they are the #1 pickle, peppers and relish brand in the country and they been around since 1926 and that’s for a reason right! So the other day when I went to Kroger to grab some Mt. Olive pickled jalapeno for my home made pizza, I saw these re-sealable pouches and right away I grabbed some. I always buy them in a jar but now these pouches looks more convenient to carry for instant snacks on the go. I love this pickles because they are perfectly flavored and they help me to keep down my weights (now I share the secret…lol).

 If you like to eat healthy lunch at work  but don’t like to buy expensive healthy lunches every day and don’t want to spend whole Sunday at kitchen to meal prep and don’t want to eat boring salad everyday then you better be stick with me to see 2 of my favorite office lunch ideas. Roasted Red Bell pepper Hummus for Lunch

Lunch Idea #1

Hummus is a staple on my fridge. I have here my favorite Roasted Red bell pepper Hummus. You can get  step by step tutorial with a video  for this Hummus Recipe here (Click here). Back to this Lunch box. I love some fresh salad so I put spring mix salad, cherry tomatoes and lot of Kosher Baby dills. This mini cucumber pickles made with sea salt and perfect tangy. I even don’t need any salad dressing because all the flavors I need this pickles have them. I added some pita bread but if you want to avoid bread then add some more veggies like Celery, fresh cucumber, fresh bell peppers, carrot etc. so this lunch can keep you full for couple of hours.

Lunch Idea #2

On my second lunch box I made Avocado-Chickpea Vegan sandwich. You will find the recipe below.  This is a quick fix recipe and only 6 ingredients needed including Mt. Olive’s Kosher Dill Chips from their New portable pouch. This pickles are gluten free and do not have any high fructose corn syrup. It made with sea salt and added turmeric for color (love this).

Pickle-ish Office Lunch Ideas

Both recipes are Light weight to stomach, made with clean & healthy ingredients, Flavorful, Quick to put together, Vegan recipe, Pocket friendly, No re-heat required (perfect for summer time).

Ingredients

  • 1 small Avocado
  • 3/4 Cup Chickpea (Canned)
  • Chopped Jalapeno to your taste
  • 1 Tbsp fresh Dill Leaves
  • Salt to your taste
  • 6-7 pieces Mt. Olive’s Kosher Dill Chips

Instructions

  1. Rinse canned Chickpea first. Mashed

  2. Mashed Chickpeas on a bowl with a masher or spoon. It will be a rough mash not smooth.

  3. Now add avocado to it and mashed with a fork so some chunks existed.

  4. Now add rest of the ingredients except Mt. Olive’s Kosher Dill Chips . Give it a good mix.

  5. Get your favorite bread. I added some spring mix greens, you can add spinach or arugula or lettuce or your favorite greens or can just omit this.

  6. on the bread add your avocado-chickpea mix. topped with Mt. Olive’s Kosher Dill Chips as much as you want.

  7. With another bread cover it up & cut into half. Wrap with a sandwich paper or put into your lunch box. ready to enjoy.
