          When for the first time I made this Sweet Potato Cake, it turned out pretty good and I didn’t expect that. So I started making it now & then. Obviously this cake is more dense and heavier than regular cake which makes it a great lunch box dessert for me. A two inch piece is pretty full filling.

     Then I tried with loosely mashed Sweet Potato instead of finely mashed/Sweet Potato puree. I just loved this new texture of my Sweet Potato cake. I highly recommend you to try this. I believe you will love it.

What is Bundt Cake & Why I like it

          There is not a big difference between a regular cake and a Bundt cake. Main difference is its shape. Though they have a variety of shapes but in general Bundt pans have hollow in middle and because of that it gets heat from middle too and that means bundt cake have more crunchier side than a regular cake.  

          One of the reason I like bundt cake because I like thick crunchy sides. Lets Dress it up

     As I say before, I like them as it is because they looks pretty because of their pan designs. But some time I go little fancy and put lemon glaze and nuts or salted caramel or chocolate ganache. My favorite is to put chocolate ganache with fresh fruits.

Sweet Potato Bundt Vegan Cake

Ingredients

  • 2/3 Cup Mashed Sweet Potato
  • 1 Cup Flour
  • 1/2 Cup Sugar Coconut or brown sugar
  • 1/4 Cup Oil
  • 1/4 Cup Apple sauce
  • 1/2 tsp Nutmeg Powder
  • 1/2 tsp Liquid Vanila
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 Cup Water

And a 6 inch bundt pan

Instructions

How to

  1. I prefer to mix all the liquids & dry ingredients separately first and then mix it together.

  2. Preheat the oven at 360F and bake for 50-55 minutes or until a toothpick comes out crearly.

  3. Let it cool down for 8-10 minutes in the pan and then take it out and let it cool down completely

  4. Done. Now Enjoy.
